    [NA] [BE] feat: enable online-scoring tracing by default (#7303)

    Flip onlineScoringTracingEnabled to default true, so the online-evaluation
    (LLM-as-judge) loop is persisted as hidden monitoring traces/spans out of the
    box (OPIK-6994 shipped it behind a default-off toggle). Also flip config-test.yml
    so CI exercises the enabled path.
