    [OPIK-6810] [DOCS] document project_name on experiment_items_bulk (#7045)

    Update the "Log experiments with the REST API" guide (latest + v1) to show
    project_name on the bulk endpoint, explaining it routes the experiment, dataset
    (if created), and auto-created traces into one project, and that omitting it
    falls back to the deprecated Default Project (with an X-Opik-Deprecation
    header). Use a single project for the dataset, experiment, and traces in every
    snippet, and use variables instead of duplicating the project/dataset literals.
